  • 1 small yellow onion finely diced
  • 4 cloves fresh garlic finely minced
  • 1.5 cups dry orzo pasta approx. 10 oz / 280g
  • 2 tbsp double-concentrated tomato paste
Simmering Broth & Cream
  • 1 can (14 oz) crushed San Marzano tomatoes
  • 3 cups low-sodium vegetable broth halal certified or wholesome vegetable stock
  • 1/2 cup heavy cream or full-fat coconut cream
  • 1/2 tsp dried oregano
  • 1/2 tsp coarse sea salt or to taste
  • 1/4 tsp freshly cracked black pepper
Greens & Melting Cheese (100% Halal Wholesome)
  • 3 cups fresh baby spinach leaves packed
  • 6 oz fresh pearl mozzarella balls or cubed fresh mozzarella, verified microbial rennet
  • 1/4 cup hard Italian-style cheese finely grated, microbial rennet / calf-rennet-free
  • 1/4 cup fresh basil leaves torn, for garnish

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of extra virgin olive oil in a large 12-inch heavy skillet or enameled Dutch oven over medium heat. Add the diced yellow onion and sauté for 3 to 4 minutes until translucent and soft.
  2. Stir in the minced garlic and 2 tablespoons of tomato paste. Cook for 60 seconds, stirring constantly, until the tomato paste darkens to a deep brick-red and releases a rich, caramelized aroma.
  3. Add the dry orzo pasta directly to the skillet. Toast the dry grains in the fragrant oil and aromatics for 1 to 2 minutes, stirring to coat every grain with the tomato fond.
  4. Pour in the crushed San Marzano tomatoes, low-sodium vegetable broth, dried oregano, sea salt, and black pepper. Stir well with a wooden spoon, making sure to scrape up any browned bits from the pan floor.
  5. Bring the mixture to a gentle boil, then immediately reduce the heat to medium-low. Simmer uncovered for 10 to 12 minutes, stirring every 2 minutes to prevent the starch from sticking to the bottom, until the orzo is tender al dente and has absorbed most of the liquid.
  6. Lower the heat to low. Stir in 1/2 cup heavy cream and the grated microbial-rennet hard cheese until a silky, creamy emulsion forms. Add the baby spinach leaves in batches, folding gently until wilted into the hot pasta (approx. 1 minute).
  7. Dot the top of the orzo with the fresh mozzarella balls. Cover the skillet with a lid or foil for 2 minutes off the heat, allowing the residual warmth to melt the mozzarella into soft, molten pockets. Garnish with torn fresh basil leaves, a light drizzle of extra virgin olive oil, and serve warm directly from the pan.
