Ingredients

Halal Bacon & Potato Foundation
  • 6 slices halal beef bacon diced into bite-sized pieces
  • 3 lbs russet potatoes peeled and cut into uniform 1/2-inch cubes
  • 3 tbsp unsalted butter for sautéing aromatics and building roux
  • 1 medium yellow onion finely diced
  • 4 cloves fresh garlic minced
Roux, Broth & Simmer
  • 1/4 cup all-purpose flour to build thickening roux
  • 4 cups chicken bone broth low-sodium halal chicken or vegetable broth
  • 2 cups whole milk at room temperature
  • 1/2 cup heavy whipping cream at room temperature
  • 1 tsp fine sea salt to taste
  • 1/2 tsp black pepper freshly cracked
  • 1/4 tsp smoked paprika for subtle warmth
Loaded Finishes & Garnish
  • 1 1/2 cups sharp cheddar cheese freshly shredded, vegetarian microbial rennet
  • 1/2 cup sour cream stirred in off the heat
  • 1/4 cup fresh chives finely sliced, for garnish

Method

Instructions
  1. Crisp the Halal Bacon: Place a large 5- to 6-quart enameled Dutch oven over medium heat. Add the diced halal beef bacon and cook for 5 to 7 minutes until deeply browned and crisp. Use a slotted spoon to transfer the crispy bacon bits to a paper towel-lined plate, leaving 1 tablespoon of rendered drippings in the pot.
  2. Sauté Aromatics & Build Roux: Add 3 tablespoons of unsalted butter to the drippings over medium heat. When melted, add the diced yellow onion and cook for 4 to 5 minutes until soft and translucent. Stir in the minced garlic and cook for 60 seconds until fragrant. Sprinkle 1/4 cup of all-purpose flour over the onions and cook, stirring constantly with a wooden spoon, for 1 to 2 minutes to cook out the raw flour taste.
  3. Add Broth & Potatoes: Slowly pour in 4 cups of chicken bone broth and 2 cups of whole milk, whisking continuously to dissolve the flour roux into a smooth, lump-free liquid. Add the cubed russet potatoes, fine sea salt, black pepper, and smoked paprika. Bring the soup to a gentle boil over medium-high heat.
  4. Simmer until Fork-Tender: Reduce the heat to medium-low, cover the Dutch oven partially with a lid, and let it simmer for 15 to 18 minutes, stirring occasionally, until the potato cubes pierce effortlessly with a fork.
  5. The Partial Mash Technique: Turn off the heat. Use a hand potato masher directly in the Dutch oven to gently crush approximately half of the cooked potato cubes. This natural starch instantly thickens the broth into a rich, velvety consistency while preserving hearty, tender potato chunks throughout.
  6. Melt Cheddar & Sour Cream: Stir in 1/2 cup heavy cream, 1/2 cup sour cream, and 1 cup of the shredded sharp cheddar cheese until fully melted, smooth, and velvety. Stir in half of the reserved crispy halal bacon bits. Taste and adjust seasoning with a pinch of sea salt or cracked black pepper if needed.
  7. Ladle & Garnish: Ladle the steaming soup into warm ceramic bowls. Garnish each bowl generously with the remaining shredded cheddar, crispy halal bacon crumbles, sliced fresh chives, and serve warm with thick slices of crusty artisan sourdough bread.
